Ingredients:
- 400g ground/minced lean pork
- Canola spray oil
- 1 minced garlic clove
- 2 green spring onions thinly sliced
- 1 red onion thinly sliced
- 1 tsp minced lemongrass
- 1 tsp chilli flakes
- 3 tbsp liquid chicken stock
- 2 tbsp fish sauce
- 3 tbsp lime juice
- 1 tbsp of brown sugar or stevia
- 4 cups mixed leafy Asian greens
- Flaxseed oil
Method:
Step 1: Spray pan with oil and heat on medium-high.
Step 2: Add garlic, green spring onion, red onion, lemongrass, and chili; stir-fry until fragrant, about 1 minute.
Step 3: Next, add pork and stir-fry, while breaking it up with a wooden spoon until cooked through, for about 6-7 minutes.
Step 4: Stir in the chicken stock, fish sauce, lime juice, sugar. Continue to cook for 5-6 minutes.
Step 5: Remove from heat, add greens to the cooked pork. Stir through well
Step 6: Plate up, garnish with fresh coriander, drizzle over the top with flax oil and serve with fresh lime wedges.
