Ingredients:
- 500g lean beef, trimmed and cut into strips
- 3 tbsp coconut oil
- 1 clove garlic crushed
- 1 tsp minced ginger
- 1 small red onion, chopped
- 1 red capsicum, thinly sliced
- 125g baby corn, cut into 2cm pieces
- 2 cups broccoli florets, halved
- 2 carrots, sliced into 5cm long strips
- 2 celery sticks, sliced
- 1/3 cup coriander, finely chopped
Stir-Fry Asian Sauce:
- 1 tbsp raw sugar
- 2 tbsp salt-reduced soy sauce
- Juice of 1 lime
- 3 tbsp hoi sin sauce
- 1 tbsp sweet chilli sauce
- 1 tbsp honey
Method:
Step 1: Add coconut oil to wok or fry pan and heat. Add beef strips, garlic and ginger. Cook over high heat until browned.
Step 2: Add capsicum, corn, broccoli, carrots and celery. Stir through well.
Step 3: In a cup, place all ingredients for sauce and whisk. Pour sauce over beef and vegetables. Stir-fry for another 2 minutes
Step 4: Garnish with chopped coriander, Himalayan salt and black pepper
